Lumpia!

Kyle has been wanting me to make lumpia for quite some time now so last night I made a batch and it turned out really good!! We were actually quite impressed with how it turned out. Not quite as good as mom's, but I'm sure I'll get to her level.... one day. :) Anyways, it's not very difficult so I figured I'd share the recipe with you all. 

MAIN INGREDIENTS:
1 lb ground beef (depending on how much you want to make. 1 lb made about 30 pieces. you can also use shrimp or ground pork)
4 little stalks green onions
handful of fresh green beans
2 carrots
half a can of water chestnuts
Morton's seasoning (if you have on hand celery, onion, or garlic seasonings and salt &pepper, you can just use those.)
Lumpia Wrappers (can buy in your local oriental store or commissary)
Vegetable Oil- to fry them in

I don't have exact measurements for everything. You kind of just have to play with it. Mine came out a little more heavy on the vegetable side, but if you aren't a big veggie person than plan accordingly.

Cut up all your veggies into fine pieces. I used a potato peeler for the green beans to get them nice and small. I used a cheese grater for my carrots. Then I used a knife to finely chop the onions and water chestnuts. It would have been convenient if I had a hand held food chopper.

Brown the ground beef and rinse and drain. Add the ground beef to the vegetable mixture along with a good amount of the Morton's Seasoning and stir. 

Once you have completed the mixture, place a lumpia wrapper on a plate. It is helpful to have a little dish of water nearby so you can dip your finger in it to put on the end of your wrapper to hold the wrapper together after rolling it. 


Place about a tablespoon of the mixture onto the wrapper. (Usually there are directions on how to fold lumpia on the backside of the plastic wrapper.)


Be sure to wrap your lumpia tight so that it does not fall apart. And try to make them all about the same size. 


Get yourself a good lookin' helper to fold lumpia with you. You can't have this one... he's taken. :) 


After you fold a few pieces place them in a dish. You can layer them on top of each other, but be sure to put saran wrap between each layer so they don't stick to each other. 


After rolling, you can place your lumpia in the freezer and save them for another time or you can eat them right away! Place some vegetable oil in a frying dish. You have to play around with the stove temperature to get it just right. Just make sure your oil isn't too hot. The lumpia cooks very fast. You want to make sure you warm the inside thoroughly. They are done when the outside is browned evenly on all sides.

You can serve them with a nice sweet chili sauce. It is soooo delicious. You can also find this in any oriental section of a food market or your local commissary. My mom also makes a delicious dip made with vinegar, crushed garlic and Morton's seasoning. Soooo tangy!! I would have made some, but I didn't have any fresh garlic. 


Tried to get a picture of the inside, but the lighting was really weird! We ate the entire plate of lumpia that I cooked! We had some lumpia left over so we put it in the freezer for another day. Might fry it up for lunch today... :)

I love that you added pictures to show the texture level of the chopping! I LOVE cookbooks with pictures. :)

I'm sick right now, so I'm just barely making it from work to home before needing to snooze and siffle. :) I'll make it after I'm better and have more energy.

I think I'll just have to try these too! I remember having them and it is hard to stop eating. It is always good to have "healthy" finger food.
